This Tomato & Vegan Cheese Pasta, cooked with very simple every-day ingredients and in just half an hour, makes it perfect for when you don’t have much time to prepare your meal, but still want to eat something delicious.

Vegan Tomato & Cheese Pasta

Ingredients
- 3 cup cooked whole wheat pasta / pasta made of legumes of your choice
- 1 tbsp extra-virgin olive oil
- 1 white onion, chopped
- 2 garlic cloves, minced
- 1 large potato, quartered
- 1 large carrot, quartered
- 2 cup oat milk
- 7 sun-dried tomatoes
- 2 tbsp cornstarch
- 2 tbsp nutritional yeast
- 1/2 tsp turmeric powder
- 2 tbsp tomato paste
- 1/2 tsp freshly ground black pepper
- Salt, to taste if necessary (we don't add any)
- 1/2 cup vegan cheese, optional
- 10 black olives, sliced
- A handful of basil leaves
Instructions
- In a pot, boil the potato and carrot until tender.
- In another pot, boil the pasta of your choice.
- Using a non-stick skillet, heat the olive oil over medium heat and sauté the onion until golden. Stir in the garlic cloves and cook for 3 more minutes.
- In a high-speed blender, combine tender potato and carrot, sauteed onion and garlic, oat milk, sun-dried tomatoes, cornstarch, nutritional yeast, turmeric, black pepper, and tomato paste. Blend until smooth.
- Pour the blend into a saucepan and stir in the vegan cheese if adding it. Heat it over low heat and add 3 cups of the boiled pasta. Combine and top with the sliced black olives and herbs.
- Serve into bowls and enjoy!
