  • In a pot, boil the potato and carrot until tender.
  • In another pot, boil the pasta of your choice.
  • Using a non-stick skillet, heat the olive oil over medium heat and sauté the onion until golden. Stir in the garlic cloves and cook for 3 more minutes.
  • In a high-speed blender, combine tender potato and carrot, sauteed onion and garlic, oat milk, sun-dried tomatoes, cornstarch, nutritional yeast, turmeric, black pepper, and tomato paste. Blend until smooth.
  • Pour the blend into a saucepan and stir in the vegan cheese if adding it. Heat it over low heat and add 3 cups of the boiled pasta. Combine and top with the sliced black olives and herbs.
