This irresistible Vegan Baked Brie en Croûte w/ Lingonberry Jam (wrapped in puff pastry) is going to become your new favourite way to eat vegan cheese! There are very few things more delicious than cheese baked inside of flakey puff pastry. So gooey, soft, creamy, and yum, paired with lingonberry jam and sliced almonds, you won’t be able to stop yourself eating it all! Plus how pretty is it? It makes for the perfect handmade present to gift your family on special occasions like Christmas, don’t you think? We made it for the New Year’s Eve celebration and loved it!


It can be made with homemade vegan puff pastry which is a much healthier alternative to store-bought (find our recipe in our cookbook & e-book on page 67 recipe NO-PIGS IN A BLANKET) or if you’re in a hurry, vegan store-bought puff pastry will do just as well. If you’re gluten-free, simply use gluten-free puff pastry! This Vegan Baked Brie en Croûte w/ Lingonberry Jam is so easy to make yet an impressive and gorgeous appetizer, side, or even a dessert, perfect for a celebration. Although it’s so good, you’ll want to serve it year-round!


It’s quite important that you brush the pastry-wrapped vegan cheese with aquafaba (the liquid inside a can of salt-free chickpeas/garbanzo beans) before baking it to achieve a prettier look and a crispier result, but if you don’t remember, know that it will be just as delicious. Vegan Brie En Croûte with Lingonberry Jam

Vegan Brie
- 1/2 cup cashews
- 3/4 cup water
- 3 tbsp nutritional yeast
- 2 tbsp tapioca starch
- 1 tsp vegan lactic acid powder
- 1/3 cup refined coconut oil, melted
- 1/2 tsp sea salt
Vegan Brie En Croûte with Lingonberry Jam
- 250 g vegan puff pastry, store-bought, optionally gluten-free, or homemade (find our recipe in our cookbook & e-book on page 67 recipe NO-PIGS IN A BLANKET)
- 3 tbsp lingonberry jam
- 2 tbsp sliced almonds
- 1 tbsp aquafaba, the liquid inside a can of salt-free boiled chickpeas
Instructions
- In a high-speed blender, combine the cashews, water, nutritional yeast, tapioca flour, vegan lactic acid powder, melted refined coconut oil, and sea salt, and blend until very smooth.
- Line a 4-inch/10cm ring mould or mini cake pan with parchment paper.
- Pour the blend into a small saucepan and bring to a simmer, over medium heat, stirring continuously until it thickens.
- Press the cheese paste into the lined mould and place directly in the freezer for 4 hours.
- After 4 hours have passed, preheat the oven to 356°F/180°C.
- Take the vegan cheese out of the freezer and carefully extract it from the mould, separating it from the parchment paper.
- Unfold the vegan puff pastry on top of a parchment paper-lined baking tray. Roll the pastry sheet into a 10-inch/25cm square. Spread 2 tbsp of the lingonberry jam on top like shown in the photo. Sprinkle 1 tbsp of sliced almonds on top. Place the frozen vegan cheese in the centre of the pastry.
- Spread 1 tbsp of lingonberry jam on the cheese, and sprinkle 1 tbsp of sliced almonds on top.
- Carefully, take each corner of the pastry dough and fold it over the top of the cheese. One corner at a time until all the cheese is covered.
- Decorate with the pastry scraps like shown in the photos.
- Use a basting brush to brush with the aquafaba all over it.
- Bake on the middle rack of the oven for 1 hour or until golden brown.
- Enjoy this festive and insanely delicious treat!
Notes
- Store any leftovers in the refrigerator in a sealed container for up to 3 days.
