This is a churned ice cream recipe. We haven’t made it no-churn, so if you don’t have an ice cream maker, we can’t guarantee the same creamy results with no ice crystals. Please, if you decided to make it without using an ice cream maker, let us know how it turned out in the comments.
Vegan Salted Caramel Ice Cream

Ingredients
The Yummiest Vegan Salted Caramel Sauce
- 1/4 cup water
- 1 cup raw sugar
- 2 tbsp agave syrup
- 3/4 cup coconut cream, canned, refrigerated overnight, extract only the solids, heated until just hot, but not boiling
- 50 g vegan unsalted butter block, at room temperature
- 1 tsp Flaked sea salt
- 1 tsp pure vanilla extract
- 1 tbsp Irish whiskey
Vegan Salted Caramel Ice Cream
- 800 ml full-fat coconut milk, canned
- 1 cup agave syrup
- 1/2 tsp guar gum
- 1 tbsp pure vanilla extract
- 2 – 4 tbsp whiskey, to your preference, but don't skip adding some, as the alcohol prevents the ice cream from getting ice crystals!!
- 1 dash sea salt
- 1/4 cup The Yummiest Vegan Salted Caramel Sauce, recipe above
Instructions
The Yummiest Vegan Salted Caramel Sauce
- Make sure you're using a saucepan that can hold a capacity of 2.5 litres.
- Place water, raw sugar, and agave syrup into the saucepan, and put it over low-medium heat. Set a timer for 8 minutes.
- While the caramel is cooking, place the coconut cream solids into a small saucepan and heat until just hot, but not boiling.
- When the 8-minute timer is done, turn off the heat, and pour the hot coconut cream into the bubbling sugar, stirring gently with a silicone spatula.
- Stir in the room temperature butter, while you keep stirring carefully.
- Add the flaked salt, vanilla extract and whiskey, stirring until smooth.
- Let the sauce cool for 10 minutes and then store in a sealed container.
- You can store the sauce in the refrigerator for up to a week. If you're going to use it after having been refrigerated, let it warm up for 2 hours before.
Vegan Salted Caramel Ice Cream
- In a high-speed blender, combine the full-fat coconut milk, agave syrup, guar gum, vanilla extract, whiskey, salt, and the 1/4 cup of The Yummiest Vegan Salted Caramel Sauce, and blend until very smooth. Chill the mixture for at least 4 hours.
- Pour the chilled mixture into an ice cream maker and follow the manufacturer's instructions.
- Add half of the ice cream mixture to a loaf pan or other freezer-safe container. With a spoon, dollop a 1/4 cup of The Yummiest Vegan Salted Caramel Sauce over the ice cream and swirl in.
- Add the rest of the ice cream over the top, then repeat the process with more caramel. Smooth the top and cover tightly with cling film before placing it in the freezer.
- Freeze for a few hours before serving the ice cream.
- Serve with a large drizzle of The Yummiest Vegan Salted Caramel Sauce on top. Yum!

Dont use Bailey’s! I ruined the first batch trying to be a hero with Baileys. Wayyy too sweet. I used a rum the second time because I didn’t have whiskey. It was great!
