The Best Healthy GF Vegan ‘Oreo’ Doughnuts

Dry Ingredients
- 7 oz rolled oats, gluten-free certified (200 g), blended into a powder-like consistency
- 1.5 oz Black Cocoa Powder ~ Super dark Dutch-process cocoa, 45 g
- 1 1/4 tsp baking powder
- 1 1/4 tsp baking soda
- 1 dash sea salt
Wet Ingredients
- 6 tbsp Just Egg, don't skip! It's what makes the doughnuts so fluffy!
- 1/2 cup vegan unsweetened almond yoghurt
- 1/2 cup unsweetened soy milk
- 3/4 cup erythritol, or organic date sugar, or a mix of both
- 1 tsp pure vanilla extract
- 2 tbsp cold brew coffee concentrate
- Cold-pressed canola oil, to grease the doughnut moulds/pans
Glaze
- 4 tbsp vegan classic cream cheese, plain
- 3 tbsp vegan unsweetened vanilla yoghurt
- 2 tsp organic soy milk powder
Toppings
Instructions
- Preheat the oven to 360ยฐF/185ยฐC.
- In a dry high-speed blender, add the rolled oats and blend until powder-like consistency.
- Stir in the black cocoa powder, baking powder, baking soda, and sea salt. Blend until it's all well combined.
- In a food processor, stir in Just Egg, vegan yoghurt, unsweetened soy milk, cold brew coffee concentrate, erythritol or organic date sugar, or a mix of both, and pure vanilla extract. Process until smooth.
- Stir in the dry ingredients from the blender, and process again until very smooth.
- Grease 2 doughnut moulds/pans with cold-pressed canola oil, using a basting brush.
- Add the batter to a piping bag and pipe it in or use a small spoon to carefully place inside the moulds.
- Bake in batches for 15 minutes, or until a toothpick inserted in the centre of the doughnut comes out dry with a few crumbs clinging to it.
- Let the doughnuts cool completely inside the doughnut mould/pan. Once cooled, take out of the moulds.
- While the doughnuts are cooling, make the glaze:
- In a bowl, combine the vegan cream cheese, vegan unsweetened vanilla yoghurt, and organic soy milk powder. Whisk until very creamy and smooth.
- Dip the doughnuts into the glaze and gently twist to coat. Top with vegan white chocolate chips.
- Refrigerate for 2 hours after dipping into the glaze so it has some time to firm up before consuming! Enjoy, they're delicious!
